Puffy Coated Onion Rings
|Sweet spanish onions||2 Large (Yellow)|
|Fat||2 Cup (32 tbs) (For deep frying)|
|Eggs||2 , separated|
|Buttermilk||1 1⁄4 Cup (20 tbs)|
|Salad oil||1 1⁄2 Teaspoon|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Baking powder||1 1⁄4 Teaspoon|
Remove skins from onions and slice into 1/4-inch thick slices.
Separate into rings.
Beat egg yolks.
Add buttermilk, oil and dry ingredients.
Beat egg whites until stiff.
Fold into buttermilk mixture.
Dip onion rings into batter.
Fry a few at a time in deep fat heated to 400 degrees.
Drain thoroughly on paper towels and sprinkle with salt.
Keep warm in oven.
Note: Rings may be frozen.
When ready to serve, place frozen cooked rings on a baking sheet and heat at 400 degrees for 5 minutes.
They burn easily.
Serves 4 to 6.
