Lentil Onion Soup
|Onion||1 Medium, thinly sliced|
|Reduced calorie margarine||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Cooked lentils||1 Cup (16 tbs)|
|Hot water||2 Cup (32 tbs)|
|Low sodium instant beef bouillon granules||2 Teaspoon|
|Tomato||1 Medium, seeded and chopped|
|Grated parmesan cheese||2 Teaspoon|
In 2-quart casserole, combine onion, margarine, garlic and pepper.
Microwave at High for 5 to 6 minutes, or until onion is tender, stirring once.
Add remaining ingredients, except cheese.
Microwave at High for 7 to 10 minutes, or until tomato is tender.
Let stand, covered, for 5 minutes.
Sprinkle each serving with Parmesan cheese.
