Quick Stir Fried Tomatoes And Onions

Ingredients
  Corn oil 4 Tablespoon
  Onions 2 , sliced
  Ginger pulp 1 Teaspoon
  Garlic pulp 1 Teaspoon
  Ground coriander 1 Teaspoon
  Chilli powder 1 Teaspoon
  Turmeric 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Canned tomatoes 14 Ounce (1 can / 425 gram)
  Chopped fresh coriander 2 Tablespoon
  Whole green chilies 2 , halved (fresh)
  Hard boiled eggs 3 , halved (for serving)
Directions

1. Heat the oil in a saucepan, add the onions and fry until soft. Lower the heat, add the ginger, garlic, ground coriander, chilli powder, turmeric and salt and stir for about 1 minute. Pour in the canned tomatoes with their juices and cook over a high heat for about 5 minutes.
2. Add the fresh coriander and green chillies and cook for 1 minute. Serve with the hard-boiled eggs.
