Quick Stir Fried Tomatoes and Onions
|Corn oil||4 Tablespoon|
|Onions||2 , sliced|
|Ginger pulp||1 Teaspoon|
|Garlic pulp||1 Teaspoon|
|Ground coriander||1 Teaspoon|
|Chilli powder||1 Teaspoon|
|Canned tomatoes||14 Ounce (1 can / 425 gram)|
|Chopped fresh coriander||2 Tablespoon|
|Whole green chilies||2 , halved (fresh)|
|Hard boiled eggs||3 , halved (for serving)|
1. Heat the oil in a saucepan, add the onions and fry until soft. Lower the heat, add the ginger, garlic, ground coriander, chilli powder, turmeric and salt and stir for about 1 minute. Pour in the canned tomatoes with their juices and cook over a high heat for about 5 minutes.
2. Add the fresh coriander and green chillies and cook for 1 minute. Serve with the hard-boiled eggs.
