Glazed Onions with Peas
|Olive oil||2 Tablespoon|
|Butter||2 Tablespoon (unsalted)|
|Small white onions||2 Pound (skinned)|
|Peas||1 1⁄2 Pound, frozen|
Heat the olive oil and the butter in a very large saute pan or frying pan with a lid.
Sprinkle the sugar into the pan, and heat gently until the sugar dissolves and turns a golden caramel color.
Add the onions to the pan and shake well until they are evenly coated with the caramel mixture.
Cover the pan tightly, reduce the heat and cook very gently for 45 minutes to 1 hour, until the onions are tender yet still retain their shape.
Shake the pan frequently to ensure even cooking.
Add the peas to the pan and cook for a further 20 minutes.
