New Potatoes With Green Onions
|Butter/Margarine||4 Tablespoon (1/2 Stick)|
|Small new potatoes||1 1⁄2 Pound, scrubbed (but not peeled) and quartered|
|Curry powder||1 Teaspoon|
|Dry mustard||1 Teaspoon|
|Chopped green onion||1⁄4 Cup (4 tbs)|
|Black pepper||1⁄8 Teaspoon|
1. Melt the butter in a 12-inch skillet, preferably nonstick. Add the potatoes and cook them, uncovered, over moderate heat about 10 minutes, stirring occasionally.
2. Sprinkle the curry powder and mustard over the potatoes, and stir well. Reduce the heat to low, cover the skillet, and cook the potatoes another 10 minutes, or until they are tender.
3. Stir in the green onions, salt, and pepper. Increase the heat to moderately high and cook uncovered, until the potatoes are crisp and lightly browned—about 5 minutes.
