Tripe And Onions

Ingredients
  Honeycomb tripe 3 Pound
  Milk 4 Cup (64 tbs)
  Butter 2 Tablespoon
  Onions 4 Medium, sliced
  Flour 3 Tablespoon
  Bay leaf 1
  Bacon slices 4
  Salt To Taste
  Pepper To Taste
Directions

Wash the tripe and simmer in salted water for 2 hours.
Refresh in cold water.
Cut the tripe in generous pieces.
Put into a saucepan with the milk, sliced onions, bay leaf, and seasonings.
Cook gently for 1 hour.
Melt the butter in another saucepan.
Add the flour and cook for 1 minute.
Strain the milk off the tripe and add this to the butter flour to make a smooth sauce.
Add the tripe and .onions to the sauce (throw away the bay leaf) and cook gently for a further 15 minutes.
Broil the bacon.
Cut it up finely and add to the tripe.
The crisp bacon gives a bite to this bland dish.
