Onion And Tomato Scramble
|Butter||1 Ounce (25 Gram)|
|Onion||1⁄2 Small, finely chopped|
|Tomato||1 , skinned and chopped|
|Bread slices||2 , toasted|
|Single cream||2 Tablespoon|
Beat the eggs with the cream and salt and pepper to taste.
Melt half the butter in a small saucepan, add the onion and fry until soft.
Pour in the egg mixture and stir slowly over a gentle heat until scrambled.
Stir in the tomato and remove from the heat.
Spread the toast with the remaining butter and pile the scrambled egg mixture on top.
