Simple Omelette

Ingredients
  Zucchini 1 Medium, sliced
  Onion 1⁄2 Small, chopped
  Green pepper 1⁄2 , chopped
  Vegetable oil 2 Tablespoon
  Potato 1 Small, boiled and diced
  Whole eggs 4
  Salt To Taste
  Pepper To Taste
Directions

Saute zucchini, onion, and green pepper in oil until zucchini is barely tender.
Add diced potato.
Beat eggs lightly and season; pour over vegetables and cook slowly until firm.
Turn out onto hot plate; cut in wedges.
