|Zucchini||2 Cup (32 tbs), peeled and cubed|
|Onion||1⁄2 , grated|
|Whole eggs||5 , beaten|
|Medium cheddar cheese||1⁄2 Cup (8 tbs), shredded|
|Fresh ground pepper||To Taste|
|Seasoned salt||To Taste|
|Parsley||1 Tablespoon, chopped|
|Cracker crumbs/Dry bread crumbs||4 Tablespoon|
Steam zucchini cubes until tender; mash and drain in colander.
Combine with rest of ingredients, except crumbs.
Pour into greased pan; top with crumbs.
Bake at 350Â° for 45 minutes or until completely set.
