Spicy Omelette Roll
|Eggs||6 , beaten (Use Egg White Only, For Low Cholesterol)|
|Chopped onion||1 Small|
|Chopped tomato||1 Small|
|Ground ginger and garlic||1⁄2 Teaspoon|
|Cumin seeds||1 Pinch|
|Chopped capsicum||1⁄2 Cup (8 tbs)|
|Chopped green chili||1|
|Chopped coriander||1 Tablespoon|
|Milk||1⁄2 Cup (8 tbs)|
|Tomato slices||3 (To Garnish)|
|Onion rings||3 (To Garnish)|
Grease with butter a large oblong microwave dish.
Mix all the ingredients together and pour them into the dish.
Cover with plastic wrap and microwave for 3 minutes turning the dish and tilting in all directions twice during cooking.
When fully cooked let it stand for 3 minutes.
Loosen omelette all round with a spatula and place on a grease proof paper.
Apply green chutney all over the omelette and roll like a swiss jelly roll.
Slice and serve, garnished with tomato slices and onion rings.
