Lemon Souffle Omelette Flambe
|Castor sugar||1 Tablespoon|
Separate the eggs.
Add the juice and grated zest of lemon to the yolks, then add the sugar and whisk until slightly thickened.
Whisk the egg whites until they are stiff and form soft peaks.
Melt the butter in a thick bottomed frying pan.
Pre heat the grill [broiler].
Carefully fold the egg yolk mixture into the whites then empty the mixture into the frying pan.
Stir and fold with a metal spoon for a few seconds to prevent sticking.
Place the pan under the grill [broiler] for a couple of minutes to allow the top of the omelette to brown lightly.
Warm a tablespoon and quickly pour the brandy into it.
Set light to the spirit and pour the flaming brandy over the souffle omelette while you are carrying it to the table.
