Potato Ham Omelette
|Potatoes||1 Pound, cooked and thinly sliced|
|Onion||1 , sliced|
|Cooked peas||1 Cup (16 tbs)|
|Spanish sausage||1 , cooked and chopped|
|Cooked ham||1⁄4 Pound, chopped|
|Salt||1 1⁄2 Teaspoon|
|Pimiento||1 , cut into thin strips|
Place half of potatoes in greased 1 1/2 -quart casserole.
Add half of sausage, ham, onion, and peas.
Sprinkle with half of salt.
Repeat process with remaining potatoes, sausage, ham, onion, peas, and salt.
Arrange pimiento on top in radiating pattern; break eggs between pimiento strips.
Cover; bake at 375° for 25 minutes
