Potato Ham Omelette

Ingredients
  Potatoes 1 Pound, cooked and thinly sliced
  Onion 1 , sliced
  Cooked peas 1 Cup (16 tbs)
  Spanish sausage 1 , cooked and chopped
  Cooked ham 1⁄4 Pound, chopped
  Salt 1 1⁄2 Teaspoon
  Pimiento 1 , cut into thin strips
  Eggs 6
Directions

Place half of potatoes in greased 1 1/2 -quart casserole.
Add half of sausage, ham, onion, and peas.
Sprinkle with half of salt.
Repeat process with remaining potatoes, sausage, ham, onion, peas, and salt.
Arrange pimiento on top in radiating pattern; break eggs between pimiento strips.
Cover; bake at 375° for 25 minutes
