|Maple syrup||3 Tablespoon|
|Finely sliced almonds||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Salt||1 Dash (Few Grains)|
|Chopped almonds||2 Tablespoon (Or Slivered)|
Beat egg yolks until thick and lemon-colored.
Add maple syrup, vanilla and salt.
Beat egg whites until stiff and dry.
Fold into yolk mixture.
Melt butter in a hot heavy 8 or 9 inch skillet; cover bottom with almonds.
Add the egg mixture.
Turn heat to low.
Cook slowly until light brown underneath, about 8 minutes.
Place in medium oven, 350 F.
About 8 to 10 minutes.
Crease and fold onto a hot platter, serve at once with warm maple syrup.
