Vegetable Omelette With Crime Fraiche

  Onions 1⁄4 Pound
  Olive oil 4 Tablespoon
  Red bell pepper 1 , cored, seeded, cut into thin strips
  Green bell pepper 1 , cored, seeded, cut into thin strips
  Tomatoes 2 , skinned, coarsely chopped
  Green chili 1 Small, seeded and chopped
  Garlic 1 Clove (5 gm), crushed
  Salt To Taste
  Pepper To Taste
  Eggs 6
  Sour cream 2 Tablespoon (Creme Fraiche)

Peel and slice the onions into rings, separate the rings and put on a round plate with half the olive oil.
Microwave for 3 minutes on HIGH.
Add all the vegetables to the onions.
Add salt and pepper.
Sprinkle the remaining olive oil over the mixture, cover and microwave on HIGH for 10 minutes.
Break the eggs into a bowl, add the sour cream (creme fraiche) and beat thoroughly with a whisk.
Pour the egg and cream mixture over the vegetables.
Micro wave on mediub for 4 minutes, then on HIGH for 2 minutes.
Slide the omelette on to a dish and serve.
If your oven is not equipped with a turntable, stir the vegetables once during (2) above and rotate the plate after 2 minutes of cooking on mediub during .
