Fluffy Omelette With Pepper

|Fat||1 1⁄2 Tablespoon|
Beat egg yolks until thick and lemon colored, add the liquid, salt, and pepper.
Beat egg whites in another bowl until stiff and dry and fold into the yolk mixture.
Melt the fat in an omelet pan or frying-pan and tip it slightly to grease sides and bottom.
Pour in the omelet and spread evenly on the surface.
If a regulation omelet pan is used grease both sides and pour half the liquid in each side.
Cook over low heat until the omelet is golden brown on the underside.
Place it in a slow oven of 350° F. for 5 min. to dry off top.
Loosen with spatula, fold, and turn on to a hot platter.
Serve at once.
