Spinach Omelette

Ingredients
  Spinach 500 Gram
  Grated sharp cheddar 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Freshly grated nutmeg 1 Pinch
  Tabasco sauce 1 Dash
  Cream 2 Tablespoon
  Sodium bicarbonate 1 Pinch
  Eggs 4 Small, slightly beaten
  Salt To Taste
  Freshly ground black pepper To Taste
  Butter 2 Tablespoon
  Oil 1 Teaspoon
Directions

GETTING READY
1.Cut the hard stems of spinach and discard them.
2.Rinse the leaves and stems properly and blanch it for 1 minute in boiling salted water.
3.Once done, drain well.
4.Let the spinach cool.
5.Press it hard to drain the excess liquid and chop it finely.

MAKING
6.Combine spinach with cheese.
7.Stir in Tabasco sauce, salt, pepper and nutmeg.
8.Mix well and stir in cream by making a well in the center.
9.Combine eggs with salt and pepper.
10.In an omelette pan, pour half the egg mixture on heated oil and butter and cook omelette.
11.Put half the filling on each side of the omelette and fold it.

SERVING
12.Serve warm with grilled tomatoes and fried potatoes.
