Swiss Chard And Spinach Omelette
|Eggs||8 , beaten|
|Swiss chard leaves||1⁄4 Pound, chopped (1 1/2 Cup, 375 Milliliter)|
|Chopped spinach||1 1⁄2 Cup (24 tbs)|
|Olive oil||8 Tablespoon|
|Freshly grated parmesan cheese||1⁄3 Cup (5.33 tbs)|
|Chopped fresh parsley||1 Tablespoon|
|Chopped fresh basil leaves||1 Tablespoon|
|Garlic||2 Clove (10 gm), chopped|
1) In a skillet, saute the chard and spinach in 4 tablespoons olive oil, until the oil is fully absorbed.
2) Allow the mixture to slightly cool, then stir into the eggs alongwith the cheese, parsley, basil and garlic.
3) In an 8-inch omelet pan, heat rest of the olive oil, pour in the egg mixture and cook over a medium heat for 10 minutes, until the omelet is firm.
4) Slice and serve the Spinach Omelet, immediately on individual serving plates.
