|Eggs||8 , beaten|
|Asparagus spears||1⁄2 Pound, 8 medium|
|Chopped parsley||1 Tablespoon|
|Scallions||3 , chopped|
|Heavy cream||1⁄2 Cup (8 tbs)|
1.Melt half of the butter and add flour to it; stir well.
2.Put asparagus, salt, pepper, scallions and parsley to it and cook on low flame for 10 minutes until asparagus turns soft but is firm.
3.Add cream to the mixture and allow to boil.
4.Once done, turn off the flame.
5.Take a large omelet pan, heat butter in it.
6.Combine eggs with asparagus and put the mixture in omelet pan.
7.Cook for 3- 4 minutes until omelet browns.
8.Serve asparagus omelet with spicy sauce.
