Flamed Vodka Omelette
|Eggs||8 , the yolks separated from the whites, and the whites stiffly beaten|
|Vodka||1⁄4 Cup (4 tbs)|
|Onion||1⁄2 , chopped|
|Heavy cream||4 Tablespoon|
1.Take a small pan, heat 1 tablespoon of butter in it and fry the onions with 1/4 teaspoon paprika in it until transparent.
2.Once done, let the onions settle at room temperature.
3.Combine onions with ret of the butter.
4.Sieve the onion butter mixture.
5.Combine egg yolks with whisked egg whites and add a sprinkling of salt.
6.In a skillet, heat paprika butter mixture and cook the omelet in it by pouring the eggs.
7.Once set, top the omelet with a mixture of remaining paprika and cream.
8.Fold the omelet thrice.
9.In a ladle, heat vodka and once flamed, pour it over the omelet
