Omelette A La Lyonnaise

Ingredients
  Onion 1 Medium, sliced
  Butter/Margarine 4 Tablespoon
  Parsley sprigs 1 , chopped
  Eggs 4
  Water 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Vinegar 1⁄2 Teaspoon
Directions

MAKING
1) Heat 3 tablespoons butter in a skillet and sauté onion till brown.
2) Sprinkle parsley on top.
3) Lightly beat eggs blending yolks and whites.
4) Mix water, salt, and pepper.
5) Add to the pan and cook on medium heat.
6) Turn omelet with spatula to cook both sides.
7) When firm, fold and put on hot platter.
8) To the skillet melt remaining butter till brown.
9) When slightly cooled, add vinegar.

SERVING
10) Add vinegar on top of omelet.
