Trader Vic's Shrimp Foo Young
|Cooked small shrimp/Chopped cooked sea food||3⁄4 Cup (12 tbs)|
|Cooking oil||2 Tablespoon|
|Bean sprouts||1 Cup (16 tbs)|
|Chopped green onions||1 Tablespoon|
|Chopped bamboo shoots||1 Tablespoon|
|Finely chopped water chestnuts||1 Tablespoon|
|Mushrooms||3 , chopped|
|Monosodium glutamate||1 Teaspoon|
Combine all ingredients, adding eggs last.
Put plenty of cooking oil (2 tablespoons) in hot skillet or on a hot griddle, and drop a liberal amount of the egg mixture (about 1/3 cup) to form small cakes.
Fry them over high heat into thick cakes, turning once, until cooked and delicately browned.
