Omelette Souffle

Ingredients
  Butter 3 Tablespoon
  All purpose flour 3 Tablespoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Milk 1 Cup (16 tbs)
  Eggs 6 , separated
Directions

Melt butter in saucepan and blend in flour, salt, and pepper.
Gradually stir in milk and cook over low heat, stirring constantly, until thickened.
Beat egg whites until stiff.
Beat yolks until thick and lemon-colored.
Stir white sauce into yolks, then fold in whites.
Pour into 3-quart casserole and set in pan of hot water.
Bake in preheated moderate oven (350°F.) for 35 minutes, or until tip of knife inserted in center comes out clean.
Serve at once.
Makes 6 servings.
