|Potato||1 Large, cut into pieces (Peeled)|
|Snipped chives||1 Tablespoon|
Put potato in blender; add cold water to cover.
Blend till coarsely chopped; drain.
In covered 8-inch skillet cook potato, chives, and 1/4 teaspoon salt in butter over medium-low heat for 10 minutes.
Put eggs and 1/8 teaspoon salt in blender; blend to combine.
Pour eggs onto potato mixture; cook over low heat, stirring lightly through top of uncooked egg, till almost set.
Cover; cook till surface of omelet is set but shiny, about 3 minutes.
