Place cod in pan covered with water, bring to boil, reduce heat, simmer 10 minutes; drain and flake cod with fork.
Saute peppers and garlic in butter, add cod and lemon juice, cook 1 minute.
Heat greased omelette pan, add beaten eggs.
Using a fork draw eggs from side of pan into centre, allow eggs to set evenly over low heat.
When almost set, spoon cod mixture over top, sprinkle with cheese.
Place under hot griller to set top and melt cheese; do not overcook.
Serve immediately cut into wedges.
