|Cooking apples||1 1⁄2 Pound (3 Large Sized)|
|Lemon||1 , rind grated finely|
|Ground cloves/Ground cinnamon||1 Pinch|
|Sugar||1⁄2 Cup (8 tbs)|
|Egg yolks||3 , beaten|
|Breadcrumbs||1 1⁄2 Cup (24 tbs)|
Wipe and core the apples.
Pour sufficient water into a roasting pan to cover the base thinly and put in the apples.
Lay a sheet of well-buttered foil on top and bake in a moderately hot oven for 30 minutes or until tender; test with a skewer.
Remove from oven and scrape out the pulp into a basin.
Add the lemon rind, spice and sugar to taste.
Beat in the egg yolks.
Butter a 4 cup pie dish or shallow casserole and spread a thick layer of breadcrumbs in the bottom.
Pour over the apple mixture and cover with remaining crumbs.
Dot all over with little knobs of butter or melt the butter and pour it over.
Return to oven and bake for 30 minutes or until crisp and golden on top.
