Maple Dessert Omelette
|Eggs||3 , separated|
|Maple syrup||3 Tablespoon|
|Vanilla extract||1⁄2 Teaspoon|
|Finely sliced almonds||1⁄2 Cup (8 tbs)|
Beat egg yolks until thick and lemon-colored.
Add maple syrup, vanilla and salt.
Beat egg whites until stiff.
Fold into yolk mixture.
Melt butter in a hot 8- or 9-inch skillet.
Cover bottom of skillet with the almonds.
Add egg mixture, then turn heat low.
Cook slowly until omelet becomes light brown underneath, about 8 minutes.
Bake in 350F oven for about 8 to 10 minutes.
Crease and fold omelet.
