Sausage And Hashed Brown Omelette
|Bulk pork sausage||1⁄2 Pound|
|Cooked potato||2 Cup (32 tbs), shredded|
|Chopped onion||1⁄4 Cup (4 tbs) (fresh or frozen)|
|Chopped green pepper||1⁄4 Cup (4 tbs) (fresh or frozen)|
|Milk||1⁄4 Cup (4 tbs)|
|Shredded process american cheese||2 Ounce (1/2 cup)|
In large skillet brown the sausage.
Drain sausage, reserving 1/4 cup drippings; set sausage aside.
Return reserved drippings to skillet.
Combine potato, onion, and green pepper; pat into skillet.
Season generously with salt; sprinkle with pepper.
Cook over low heat till underside is crisp and brown.
Blend eggs, milk, 1/4 teaspoon salt, and dash pepper.
Pour over potatoes.
Top with cheese and sausage.
Cover; cook over low heat for 6 to 8 minutes.
Loosen omelet; cut in wedges to serve.
