|Butter||1⁄4 Cup (4 tbs), divided|
Combine eggs, salt, pepper, and water.
Beat lightly with a fork, just until yolks and whites are combined.
Heat 1 tablespoon butter in an omelet pan over high heat just until butter begins to turn brown.
Add one-quarter of the egg mixture and immediately stir briskly with a fork.
When eggs have thickened, stop stirring.
With left hand, shake the pan gently back and forth to loosen eggs and brown the bottom gently.
Remove skillet from heat and tip it gently.
Fill center of omelet, if desired.
With a fork, fold one-third of omelet over center.
Then fold other third over first.
Slide omelet out of pan onto a heated serving dish and cut in half.
Repeat three more times.
