Omelette For One
|Parsley||2 Teaspoon, chopped|
|Chives||2 Teaspoon, chopped|
|Cottage cheese||2 Tablespoon|
|Mung bean sprouts||1 Tablespoon|
|Pepper||To Taste, freshly ground|
Beat eggs in small bowl with fork.
Beat in chopped parsley and chives.
Heat omelet pan until it sizzles when a drop of water is sprinkled on it.
Quickly melt butter in pan.
Pour in egg mixture.
Grasp handle of pan in one hand and fork in other.
Shake pan as you mix the egg with the tines of the fork until egg starts to solidify.
Lift up edges of egg and let liquid run underneath.
Omelet is done when underneath part is solid and center is still moist.
Fill center with cottage cheese and sprouts.
Fold over and turn out onto plate.
