Sherried Shrimp Omelette

Ingredients
  Minced mushrooms 1⁄2 Cup (8 tbs)
  Minced green onion 1 Tablespoon
  Butter 3 Tablespoon
  Small shrimp 1 Cup (16 tbs), cooked and shelled
  Flour 1 1⁄2 Tablespoon
  Light cream 3⁄4 Cup (12 tbs)
  Sherry 1⁄4 Cup (4 tbs)
  Omelet 2 (Three Egg)
Directions

Simmer mushrooms and onion in butter until mushrooms are cooked.
Add shrimp.
Stir in flour.
Gradually add cream, and cook until thickened.
Blend in sherry.
Fill each omelet with 2 tablespoons of the shrimp mixture.
