Break eggs into bowl or cup, and beat with fork until blended.
Beat in granulated sugar replacement.
Coat small frying pan with vegetable spray.
Heat until warm.
Add eggs and cook them over low heat until lightly set.
Run fork or spatula around edge of omelette.
Tilt pan slightly to allow excess egg to seep under the pan.
Continue cooking until firm.
Fold in half; remove to heated serving plate.
Sift 2 t. (10 mL) powdered sugar replacement over omelette.
