Crab Omelette

Ingredients
  Onions 3 , minced
  Pepper 1⁄2 Teaspoon (White Or Black)
  Garlic 3 Clove (15 gm), minced fine
  Lard 6 Tablespoon
  Celery 2 Tablespoon, cut up fine
  Fresh crabmeat 1 Pound (Either White Or Dark)
  Parsley 2 Tablespoon, cut up fine
  Eggs 8
Directions

Put the onions and garlic in lard in a saucepan and let fry slowly until brown.
Put in the crabmeat and cook for 10 minutes.
Put in the seasoning, celery, and parsley.
Beat eggs well in a large bowl until they are frothy.
Let the crabmeat mixture cool, pour it into the bowl with the eggs, stir well.
Place the mixture in a greased omelet pan, put on a slow fire and cook, turning the pan over every 5 minutes.
