|Chives||2 Tablespoon, finely chopped|
|Smoked ham||1⁄2 Pound, thinly sliced|
|Canned mushrooms||5 Ounce (1 Can)|
|Yellow onion||1 , finely chopped|
1. Saute the mushrooms and onion and add the ham when the onion is transparent. Saute the ham about 5 more minutes. Season with paprika. Set aside.
2. Beat the eggs quickly, add milk, salt, pepper, and chives.
3. Brown butter in a frying pan. Pour in the egg batter and let it set while stirring a few times. Remove pan from heat when the omelet is set.
4. Top omelet with the mushroom-onion mixture and serve at once.
