Baked Blueflsh With Olives And Tomatoes

Ingredients
  Olive oil/Vegetable oil 2 Tablespoon
  Yellow onion 1 Small, peeled and chopped
  Chopped green olives 1⁄4 Cup (4 tbs)
  Sweet green pepper 1⁄2 Small, cored, seeded, and chopped
  Fresh tomatoes/1 can of 1 pound tomatoes, drained and chopped 3 Medium, peeled and chopped
  Dry white wine 1⁄2 Cup (8 tbs)
  Tomato paste 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Bluefish fillets/Mackerel fillets 1 1⁄2 Pound
Directions

1. Heat the oil in a 2-quart saucepan over moderate heat. Add the onion, olives, and green pepper, and cook uncovered, for 3 minutes. Add the tomatoes, and cook 5 minutes longer. Add the wine, tomato paste, salt, and black pepper, and simmer, uncovered, for 20 minutes.
2. About 10 minutes before the sauce is done, preheat the oven to 350°F. Place the blueflsh fillets in an ungreased 8"x8"x2" baking dish, and spoon the sauce over them. Bake, uncovered, for 10 minutes or longer, depending on the thickness of the fish. When the fish flakes easily when tested with a fork it is done.
