This Okay Okra is a fabulous combination of Okay, Okra and grated cheese!Try out the Okay Okra with your favorite savory sauce and let me know what you think about the dish!
Ingredients
  Bacon fat/Oil 2 Tablespoon
  Onion 1 Large
  Green pepper 1⁄2
  Canned tomatoes 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Ground pepper 1 Dash
  Lemon juice/Grated lemon rind 1 Teaspoon
  Okra 1 Pound
  Flour 1⁄4 Cup (4 tbs)
  Oil 2 Tablespoon
  Grated cheese 1⁄5 Cup (3.2 tbs)
Directions

It takes 2 medium skillets to make this, but it's worth the extra trouble.
Start with the sauce.
Heat the fat and tan the onion and green pepper in a skillet.
Add tomatoes, salt, pepper, and lemon juice or rind.
Simmer this 15minutes.
Dust okra with flour.
Prepare another skillet.
Heat oil, add okra.
Cook until heated but not brown.
Reduce heat, pour sauce over okra.
Add grated cheese, cover skillet.
Simmer for 15 minutes.
The okra will be tender and so okay.
