Okra Croquettes

Ingredients
  Shortening 1⁄2 Cup (8 tbs)
  Egg 1 , beaten
  Flour 1 Tablespoon
  Cornmeal 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Minced okra 2 Cup (32 tbs)
  Onion 1⁄4 Cup (4 tbs), minced
Directions

Heat shortening in 10-inch skillet.
Combine egg, flour, cornmeal, salt and pepper; mix well.
Stir in okra and onion.
Drop from tablespoon into hot fat; cook for 3 minutes or until golden brown, turning once and flattening with spatula.
