New Orleans Okra

Ingredients
  Olive oil 1 Tablespoon
  Onion 2 Cup (32 tbs), chopped
  Celery 1⁄2 Cup (8 tbs), minced
  Minced green bell pepper 1⁄2 Cup (8 tbs)
  Tomato paste 1 Tablespoon
  Canned diced tomatoes 29 Ounce (2 Can, Undrained)
  Ground red pepper 1⁄2 Teaspoon
  Okra pods 1 1⁄2 Pound, trimmed and cut into 1/2-inch slices
  Salt 1⁄4 Teaspoon
Directions

Heat oil in a Dutch oven over medium-high heat.
Add onion, saute 5 minutes.
Add celery, bell pepper, and tomato paste, cook 2 minutes.
Stir in diced tomatoes and red pepper, cook 10 minutes or until sauce thickens.
Add okra pods.
Cover, reduce heat, and simmer 20 minutes or until okra pods are tender.
Stir in salt.
