Cucumbers In Vinegar And Oil

  Oil 1⁄4 Cup (4 tbs)
  Vinegar 1⁄2 Cup (8 tbs)
  Sugar 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Cucumber 1 , thinly sliced
  Onion 1 Small, thinly sliced

In bowl, combine all ingredients.
Cover and chill several hours.
Drain and serve on lettuce leaves or toss with green salad, using oil and vinegar mixture as dressing.
Prepared onion dressing with a little salt also makes a good marinade for cucumbers.
Drain and serve on lettuce leaves or as a relish.
