Lamington

Lamington is a soft sponge cake normally brown in color with a white coating and is cuboid in shape. It is covered with chocolate frost, icing sugar and shriveled coconut and provides a white color to the cake. The cake is generally sliced from the middle and filled with cream and jam prior to serving. Its origin dates back to Australia and is a prime delicacy there. The lemon variety is also found in Australia, whereas the raspberry variation is common in New Zealand. The cake derives its name from the governor of Queensland who consumed it in Toowoomba and is relished by people especially in the Southern Hemisphere. The cake can be stored in refrigerator for about a week if kept in air tight containers.

 

Ingredients and Method of Preparing Lemmington

The basic ingredients used in the preparation of Lamington cake are eggs, sugar, flour, butter, bicarbonate soda and water. The constituents used to make the chocolate frosting include unsweetened desiccated coconut, icing sugar, cocoa powder, butter and milk. The first step is to prepare the cake and for this initially the oven is preheated. Then the flour and other ingredients are whisked together to form a smooth batter. A baking tray is greased with butter and dusted with flour. The prepared mix is emptied into the greased tray and is put into the oven for baking. It is baking for about half an hour and the cake is checked before removing from the oven. Now, Lamington is removed from the mold and allowed to cool on a wire mesh. Simultaneously the chocolate frosting is prepared and for this cocoa powder, sugar and milk are heated in a pan until a smooth paste is formed. Now, the cake is cooled in the refrigerator and cut into small cuboids prior to its coating. The pieces of the cake are topped with melted chocolate and are rolled in a plate full of desiccated coconut.

Lamington can be served as it is or can be sliced from the middle and filled with whipped cream or strawberry jam. It is usually served cold along with a glass of piping hot drinking chocolate or a cup of coffee. This delicacy can be served as a snack or as a sweet dish after meals along with a scoop full of vanilla flavored ice cream.

 

Variations can be brought about in the traditional recipe to a certain extent. For instance, lemon filling can be used instead of the normal vanilla flavored whipped cream or raspberry jam may also be used as a substitute. Instead of dipping the cake pieces into the chocolate frost, the cake can be coated with it, by simply pouring the melted chocolate over it. If unsweetened coconut is not available, sweetened desiccated coconut may be used, but the amount of sugar in the main recipe should be reduced considerably.
