Polynesian Spareribs

  Spareribs 4 Pound
  Salt 2 1⁄2 Teaspoon
  Water 3 Cup (48 tbs)
  Cornstarch 1 Cup (16 tbs)
  Brown sugar 1 1⁄4 Cup (20 tbs)
  Soy sauce 3⁄4 Cup (12 tbs)
  Cider vinegar 1 1⁄4 Cup (20 tbs)
  Pineapple juice 2 Cup (32 tbs)
  Shortening 1⁄2 Cup (8 tbs)
  Green pepper 1⁄2
  Pineapple tidbits 1 Cup (16 tbs)
  Tomato wedges 2

Arrange ribs in electric frying pan.
Set dial at 250 degrees.
Sprinkle ribs with 1 1/2 teaspoons salt; add water.
Cover; bring to boil.
Reduce heat to 220 degrees.
Cook ribs until tender, 1 hour and 30 minutes to 2 hours, adding water as needed.
Drain and remove ribs.
Mix in saucepan remaining salt, 1/4 cup cornstarch and brown sugar.
Add 1/4 cup soy sauce, vinegar and pineapple juice.
Cook slowly until thickened and clear.
Set aside.
Increase heat to 300 degrees.
Melt shortening.
Mix in remaining cornstarch and soy sauce.
Coat ribs with mixture.
Brown ribs in hot fat.
Drain off fat.
Reduce heat to 220 degrees.
Cover ribs with sauce.
Cover pan; cook until starch on ribs is done 20 to 25 minutes.
Add pepper, pineapple and tomatoes; cook for 5 minutes longer.
Serve plain or with rice.
