Polynesian Baked Mackerel

Ingredients
  Mackerel 4 (0.5 pound each)
  Salt To Taste
  Pepper To Taste
  Butter 1⁄4 Cup (4 tbs)
  Mushrooms 2 Cup (32 tbs), sliced
  Thyme sprig 1 Small
  Bay leaf 1
  Lemon 1
  Pineapple juice 2⁄3 Cup (10.67 tbs)
  Dry white wine 2⁄3 Cup (10.67 tbs)
  Soy sauce 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Onion 1 Medium, chopped
  Sugar 1 Teaspoon
Directions

1 Preheat the oven to 400°F.
2 Clean and wash the fish. Make 4 slits in each mackerel. Season with salt and pepper and place in a shallow dish.
3 Place all the ingredients for the marinade in a blender and blend. Transfer the marinade to a pan and boil for 5 minutes.
4 Slice the mushrooms and heat the butter in a small pan. Add the mushrooms and saute for 1 minute and place around the fish, with thyme and bay leaf.
5 Pour on the marinade and bake in the oven for 25 minutes. Baste with the liquid from time to time.
6 Serve with wedges of lemon Polynesian Baked Mackerel - the mackerel are marinated in pineapple juice and white wine and baked with mushrooms.
