Polynesian Chicken With Rice

Ingredients
  Oil 2 Tablespoon
  Boneless chicken breasts 1 Pound, cut into thin strips
  Canned pineapple chunks in juice 8 Ounce, drained and reserve juice (1 Can)
  Green pepper 1 Medium, cut into thin strips
  Golden onion soup mix 1 Ounce (Lipton, 1 Envelope)
  Water 3⁄4 Cup (12 tbs)
  Soy sauce 2 Teaspoon
  Ground ginger 1⁄4 Teaspoon
  Unsalted cashews 1⁄2 Cup (8 tbs)
  Hot cooked rice 1 Cup (16 tbs)
Directions

MAKING
1. In a medium skillet, pour in the oil and heat it well. Add the chicken to the pan and sauté on medium heat.
2. Add the pineapple, green pepper, golden onion soup mix to the pan and mix thoroughly. If there is left over pan juice, then blend it with water, soy sauce and ginger and mix well
3. Bring this mixture to a boil and simmer for 10 minutes till the sauce is thick and the chicken and tender. Add the cashews to the pan and sauté till done.

SERVING
4. Pour the cashew mixture over hot rice and serve sprinkled with coconut
