Australian Meat Pies With Tomato Sauce

  All purpose flour 3 Cup (48 tbs)
  Salt 1⁄2 Teaspoon
  Lard 2⁄3 Cup (10.67 tbs)
  Butter 1⁄2 Cup (8 tbs)
  Egg yolk 1
  Cold water 1⁄2 Cup (8 tbs)
  Egg 1 , lightly beaten
  Tomato sauce 1 Tablespoon (As Required)
For filling
  Vegetable oil 2 Tablespoon
  Onion 1 , finely chopped
  Garlic 1 Clove (5 gm), minced
  Lean ground lamb 1 Pound
  Beef stock 1 Cup (16 tbs)
  Tomato paste 1 Tablespoon
  Worcestershire sauce 2 Teaspoon
  Dried thyme 1⁄4 Teaspoon
  Hot pepper sauce 1⁄4 Teaspoon
  Potato 1 , diced
  Carrot 1 , diced
  Turnip 1 , diced
  Salt 3⁄4 Teaspoon
  Pepper 1⁄2 Teaspoon

1) Into a bowl, mix together flour, salt, butter and lard
2) Using the hands mix together to get a course sand like texture
3) Add the egg yolk and cold water
4) Using a fork, add more yolk if required to bring the dough together
5) Cling wrap the dough and keep in the refrigerator for 30minutes
6) Into a frying pan, sweat the onion and garlic
7) Add the lamb and cook for 5 minutes till brown
8) Pour off the excess fat
9) Tip in the stock, tomato paste, Worcestershire sauce, thyme, hot pepper sauce, potato, carrot, turnip and bring to a gentle boil
10) Turn the flame to a low and simmer covered for 10 minutes
11) Take off the lid, and simmer for 15 minutes till the vegetables become tender
12) Add salt and pepper to taste, and allow to cool
13) Onto a floured surface, roll out pastry using a rolling pin
14) Cut pastry into 12 rounds of 4 ½ inch to fit 6 individual pie dishes
15) Line each pie dish with a round pastry
16) Using a pastry brush, brush the edges with a little beaten egg
17) Spoon the filling into the pie dishes
18) Close the top with the other half of the pastry over the filling
19) Seal and crimp the edges
20) Using a knife, cut air vents and brush the top of the pastry with egg
21) Bake in preheated oven at 400°F for 40 minutes till pastry turns a golden brown

22) Serve the pies with tomato sauce
