Baked Red Snapper Meuniere
|Butter||1⁄2 Cup (8 tbs), cut into thin pieces|
|Finely chopped parsley||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Snapper||3 Pound (Whole / Pan Dressed)|
1. In a 10-inch round baking dish, combine butter, parsley, and lemon juice. Microwave, uncovered, at Cook Cycle 1 (power level 10) for 1 1/2 to 2 1/2 minutes, or until butter is melted. Stir to combine ingredients.
2. Place snapper in baking dish, turning once to coat both sides with butter mixture. Cover with wax paper. Microwave at Cook Cycle 2 (power level 9) for 10 to 13 1/2 minutes. The fish is done when the flesh comes away easily from the bones when flaked with a fork. Let fish stand, covered, 3 to 5 minutes before serving.
