Polynesian Ham Salad

Ingredients
  Brand rice 3 Cup (48 tbs)
  Water 2 1⁄3 Cup (37.33 tbs)
  Salt 3⁄4 Teaspoon
  Butter/Margarine 1 1⁄2 Tablespoon
  Diagonally sliced celery 2 Cup (32 tbs)
  Cubed cooked ham 2 Cup (32 tbs) (3/4 inch cubes)
  Canned mandarin orange segments 22 Ounce, drained (2 cans, 11 ounce each)
  Green pepper 1⁄2 Medium, cut in thin 1 inch long strips
  Dairy sour cream 1⁄2 Cup (8 tbs)
  Mayonnaise/Mayonnaise style salad dressing 1⁄4 Cup (4 tbs)
  Lemon juice 2 Teaspoon
  Salt 1 Teaspoon
  Seasoned pepper 1 Teaspoon
  Onion powder 1 Teaspoon
  Crisp salad greens 1 Cup (16 tbs)
  Toasted sliced almonds 1⁄4 Cup (4 tbs)
Directions

Cook rice with water, 3/4 teaspoon salt and butter or margarine according to package directions.
Chill.
In a large bowl, combine rice, celery, ham, orange segments and green pepper.
Combine sour cream, mayonnaise or salad dressing, lemon juice, 1 teaspoon salt, seasoned pepper and onion powder.
Fold into rice mixture.
Chill well.
