Polynesian Ham Salad

|Butter/Margarine||1 1⁄2 Tablespoon|
|Diagonally sliced celery||2 Cup (32 tbs)|
|Cubed cooked ham||2 Cup (32 tbs) (3/4 inch cubes)|
|Canned mandarin orange segments||22 Ounce, drained (2 cans, 11 ounce each)|
|Green pepper||1⁄2 Medium, cut in thin 1 inch long strips|
|Dairy sour cream||1⁄2 Cup (8 tbs)|
|Mayonnaise/Mayonnaise style salad dressing||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Teaspoon|
|Seasoned pepper||1 Teaspoon|
|Onion powder||1 Teaspoon|
|Crisp salad greens||1 Cup (16 tbs)|
|Toasted sliced almonds||1⁄4 Cup (4 tbs)|
Cook rice with water, 3/4 teaspoon salt and butter or margarine according to package directions.
In a large bowl, combine rice, celery, ham, orange segments and green pepper.
Combine sour cream, mayonnaise or salad dressing, lemon juice, 1 teaspoon salt, seasoned pepper and onion powder.
Fold into rice mixture.
