|Chicken livers||3⁄4 Pound, washed, drained and cut in half|
|Canned whole water chestnuts||6 1⁄2 Ounce, drained (1 Can)|
|Soy sauce||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm) (Small Clove)|
|Dried hot red chili||1 , crushed (1 Inch Long)|
|Fresh ginger slices||6|
Fold each piece of liver around a water chestnut, wrap with a half slice bacon, and carefully fasten with wooden picks or bamboo skewers.
Mix together the soy sauce, garlic, chile, and ginger.
Marinate the chicken liver bundles in this sauce for several hours, turning occasionally.
Then place the appetizers on a rack in a shallow pan and broil 5 to 7 minutes, turning once.
