Polynesian Chicken With Macadamia Nuts And Toasted Coconut

  Frying chicken 3 Pound, cut up
  Canned frozen orange juice concentrate 6 Ounce, thawed
  Cornstarch 1 Tablespoon
  Salt 1 Teaspoon
  Cinnamon 1⁄4 Teaspoon
  Lime juice 1 Tablespoon
  Sliced bananas 4
  Macadamia nuts 1⁄2 Cup (8 tbs)
  Watercress sprigs 3 (For Garnish)

Cut larger pieces of chicken so all pieces are the same size.
Arrange in a shallow 2-quart glass baking dish, skin side up.
Set aside.
In a small bowl, mix juice concentrate, cornstarch, salt, cinnamon and lime juice.
Pour over chicken.
Microwave, covered with wax paper, 28 minutes on high, basting sauce over chicken after 15 minutes of cooking time.
Microwave, uncovered, 1 minute, after adding bananas and nuts.
Garnish with sprigs of watercress.
