Bermuda Beet Salad
|Bermuda onion||1 Medium, sliced|
|Tart red apples||2 Medium, thinly sliced|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Cider vinegar||1⁄4 Cup (4 tbs)|
|Caraway seeds||1⁄2 Teaspoon|
|Tamari sauce/Soy sauce||1 Teaspoon|
|Beets||5 , cooked, peeled, and thinly sliced|
Separate the onion slices into rings and place in a 1- to 1 1/2-quart glass or enamel serving dish.
Arrange the apple slices over the onion rings.
Mix together the lemon juice, vinegar, caraway seeds, and tamari in a small bowl or jar.
Pour over the apples and onions.
Toss the beets with the apple and onion mixture.
Marinate in the refrigerator for about 4 hours and toss before serving.
