Polynesian Fruit And Vegetable Vinaigrette
|Canned pineapple slices with juice||2 Small, cut into 8 pieces each|
|Pineapple juice||2 Tablespoon|
|Cucumber||1⁄2 Medium, peeled and cut in 1/2 inch-thick slices|
|Green pepper||1⁄2 Medium, cut in 1-inch squares|
|Red pepper||1⁄2 Medium, cut in 1-inch squares|
|Canned drained button mushrooms||1⁄2 Cup (8 tbs), drained|
|Soy sauce||1 Teaspoon|
|Garlic||1 Clove (5 gm)|
|Ground ginger||1⁄4 Teaspoon|
|Artificial sweetener||To Taste (Equal To 4 Teaspoons Sugar)|
Combine pineapple, cucumber, peppers and mushrooms in small jar or bowl.
Heat remaining ingredients and pour over cut-up fruit and vegetables.
Refrigerate overnight or several days, turning several times.
