Shrikhand For Holi

Shrikhand is one of the most popular among the desserts from Western India, especially from the Gujarati and Maharashtrian cuisine. Made using yogurt, Shrikhand is a lip smacking snack. It is also a very healthy and nutritious dish is very prepared during Holi. Very similar to the stirred fruit yogurt available in the United States, Shrikhand is basically a smooth blend of hung yogurt and sugar.

 

 

Some of the flavors that are quite commonly used include

1. Cardamom

2. Pista 

3. Almond

4. Mango

5. Rose and

6. Saffron.

Shri Khand can be prepared very easily, but the process is time consuming. All you need to prepare this sweet luscious delicacy are full fat, unsweetened and unflavored, yogurt, sugar and powdered cardamom. Hand the yogurt in a muslin cloth to drain all the water. You can hang the yogurt in the night as it will take at least 8 hours for the curd to become ‘chakka’.  Blend hung curd with sugar to get a creamy, smooth paste. Keep it in the refrigerator for a while allowing it to become slightly cold and then serve. Add saffron strands or dry fruits powder to enrich Shrikhand. Or while you serve Shrikhand, garnish with chopped almonds or pistachio nuts. You can even add rose essence.

1. Chocolate Flavored Shrikhand

All of us love chocolates and chocolate flavored desserts. So, this time when you prepare Shrikhand, add a teaspoon full of drinking cocoa powder. Serve in a tall glass with roasted nuts and raisins on the top.

 


2. Raspberry

Blend the hung curds and castor sugar to a smooth paste and then add freshly chopped raspberries. Blend once again. Cool and serve with chopped nutmeg toppings.

 


3. Cantaloupe

Prepare the plain Shrikhand. Before serving, slice cantaloupes into small cubes and arrange them in stem-less wine glasses. Now, add Shrikhand to this. Garnish with chopped cashews and serve as a dessert.

 


4. Avocados

Blend hung curds, granulated sugar and vanilla essence. Puree avocado cubes with lemon zest. Now, you can blend the avocado puree with the vanilla-flavored yogurt. Serve with saffron strands garnishing.

 


5. Grapes

To the hung curds, add powdered sugar and cardamom powder. Beat well using whisk till sugar is completely dissolved in curd. Add dissolved saffron and chopped and roasted almonds and cashew nuts. Keep it in refrigerator. Before serving, mix chopped grapes. Garnish with chopped nuts.

 


6. Rasgolla

Pour mango Shrikhand or cardamom Shrikhand over crushed rasgollas and serve chilled garnished with chopped pistachios.

 


7. Gulab Jamun

A very unique combination, you can pour Saffron flavored or chocolate flavored Shrikhand over small, hot gulab jamuns and serve with a dash of cardamom powder.

 

Serve the delicious Shrikhand as a dessert or as a side dish for Poori or Rotis.
